Winemaking: Aging for a minimum of one year in barrels.
Tasting notes: Aromatic, fruity and spicy. It begins with a sweet entry full of woody notes, followed by a wide aromatic range of Mediterranean herbs and a sour, bitter and fresh finish.
Food maching: Cockles, squid a la Romana, octopus a la Gallega, Iberian ham, foie.
